Vegetarian Meatloaf

Although this recipe is not vegan, you can easily substitute the cheese for a vegan alternative, and the egg for ground flax seeds and water. This vegetarian meatloaf tastes great and also freezes easily. I plan to make several of these in advance and freeze for use on busy days!

Ingredients needed:

2 cups water
1 teaspoon sea salt
1 cup lentils
1 onion, diced
2 garlic cloves, minced
1 cup quick-cooking oatmeal
3/4 cup grated cheddar cheese
1 egg, beaten
3/4 cup BBQ sauce
1/4 cup parsley, chopped
Salt and pepper to taste

Cooking instructions:

Preheat oven to 350 and well grease a loaf pan (I used canola oil). Add salt to water and bring to a boil. Add lentils and simmer, covered, for 30 minutes or until lentils are soft and water is evaporated. Drain, and partially mash lentils. Transfer to a mixing bowl and allow to cool. Stir in onion, garlic, oats and cheese until well blended. Add egg, BBQ sauce, parsley and salt and pepper to taste. Mix well.

Spoon into prepared loaf pan. Smooth the top with a spoon. Bake for 30 – 45 minutes until the top of the loaf is dry, firm and golden brown. Cool in pan for 10 minutes. You may need to run a knife around the edges of the pan to remove the loaf. Enjoy!
