Our intention is to offer more cabbage recipes because of the outstanding health benefits, and because it is so economical. This vegetable is a perfect example of outstanding nutrient density. We even think cabbage deserves “super food” classification. Hopefully this vegan red cabbage coleslaw recipe inspires you to eat more of this delicious and nutritious vegetable all year long.
1/4 cup apple cider vinegar (more as needed)
1 tablespoon honey
1 tablespoon dijon mustard, or 1 teaspoon mustard powder
1/8 cup olive oil
1 teaspoon Aman Prana seasoning or you favorite blend of seasonings
1/4 teaspoon black pepper
1/2 head red cabbage, very thinly sliced
2 medium carrots, shredded
1/2 cup fresh parsley, chopped
Add the first six ingredients to a bowl and stir until thoroughly mixed. Combined cabbage, carrots and parsley in a separate bowl and toss with dressing. Enjoy!
