I had a plethora of sweet peppers growing in our garden, so decided to try this sweet pepper poppers recipe. As a cheese lover, I used goat cheese, but a vegan alternative or even tofu would work great as well! This is a perfect recipe for college football bowl season, or a pot luck!
10 mini multi-colored sweet peppers (you could also throw some hot peppers into the mix if you like)
Sea salt and pepper
6 ounces herbed goat cheese, or alternative
1 teaspoon fresh thyme
1/2 cup gluten free bread crumbs
2 tablespoons butter (or vegan alternative), melted
Preheat the oven to 400 degrees. Slice each pepper in half lengthwise, keeping the stem intact. Remove the ribs and seeds. Sprinkle each pepper with salt and pepper and place in a baking dish. Whip the goat cheese and thyme together, adding additional salt and pepper if needed. Fill each pepper with the cheese mixture.
Place the breadcrumbs in a small bowl, and pour the butter over them. Toss to combine. Sprinkle each pepper with the breadcrumb mixture. Bake until golden, 15 – 20 minutes.
