Spicy (or not) Coleslaw Recipe

In our opinion, coleslaw is great anytime of year, and you need to try this coleslaw recipe! There is no mayonnaise so it is light and refreshing. You can make it spicy with horseradish and red onion, or leave those ingredients out, and still enjoy this flavorful recipe adapted from “Greens Glorious Greens!”.

Ingredients needed

1 head green cabbage, shreddedcoleslaw recipe 1
3 carrots, peeled and shredded
6 – 10 radishes*, shreddedcoleslaw recipe 2
1/4 cup finely chopped parsley (more if you prefer)coleslaw recipe 3
2 tablespoon finely chopped dill (more if you prefer)coleslaw recipe 4
3/4 cup freshly squeezed orange juicecoleslaw recipe 5
2 tablespoons dijon mustard
1 tablespoon freshly grated horseradish*
2 tablespoons minced red onion*
1 tablespoon fresh lemon juice
1 teaspoon raw honey, or maple syrup
2 tablespoons olive oil
Salt to taste

*these ingredients will increase the “spiciness”

Preparation

The first 3 ingredients can be shredded by hand, food processor, or purchased already shredded. In a large bowl, combine cabbage, carrots, radishes, parsley and dill. Gently mix.

Thoroughly whisk, blend, or process, the remaining ingredients together. Pour over the salad and stir to combine. Enjoy!
