Cucumber Pinapple Sipper

This recipe is more of an Elixir than a Smoothie. We may need to create an elixir category on this blog if our friend Nina continues to offer up her raw food knowledge for us to share. For now, let’s get a little taste of the kinds of things Nina combines in her blender for optimal health and wellbeing.

Some of the benefits of this “Cucumber Pineapple Coco Sipper”:

  • Hydrating

This is a great mid-day re-energizer, or forego dessert when the “after meal sweet tooth” hits, and have this instead!

1 cup fresh organic spinach
8 chunks fresh or frozen organic pineapple
1 medium peeled organic cucumber
1 heaping tablespoon raw organic coconut butter or oil
pinch of fresh ginger root
3/4 cup coconut water
3/4 cup vanilla unsweetened almond milk
1 organic date or fig
ice as needed

Combine in a Blender or Vitamix and enjoy in bliss.
