Smoked Garlic Soup

Our local market recently had smoked garlic braids imported from France available. I have never cooked with smoked garlic so I was curious. Not only did it give our kitchen an earthy, smoky smell, but it also tasted great in several recipes including this soup, and chili!

Smoked Garlic Soup Recipe

I found a recipe on the internet for this soup and adapted it. It could easily be prepared vegan by substituting the cream and butter with a vegan substitute of your choice.

4 bulbs smoked garlic
1/4 cup olive oil
5 tablespoons butter
4 leeks, chopped
1/2 onion, diced
6 tablespoons flour (gluten free can be used)
4 cups vegetable broth
1/3 cup dry white wine
1 cup organic whipping cream
Fresh lemon juice
Salt and pepper to taste

Cooking Instructions

Chop smoked garlic cloves and set aside. Melt butter in a heavy saucepan over medium heat. Add leeks and onions and sauté until onion is translucent. Add garlic and sauté until garlic gives off an aroma, approximately one minute. Reduce heat to low.

Add flour and cook several minutes, until thoroughly combined. Stir in hot vegetable stock and white wine. Simmer 20 minutes, stirring occasionally. Cool slightly. Puree soup in blender, food processor, or with an immersion blender. Return to pan and add cream. Simmer until thickened, approximately 15 minutes. Add lemon juice, salt and pepper to taste. Enjoy!
