Cilantro is a rich source of many essential oils and antioxidants, including quercetin, a bioflavonoid that is commonly recommended during allergy season for anti-histamine support. Cilantro is also loaded with vitamins C, A and K. Per 100g (or a little over 1/3 cup) cilantro provides 45% of the RDA for vitamin C, and a whopping 225% and 258% of vitamins A & K respectively.
White bean cilantro dip presentation
So easy to make, and a great alternative to traditional hummus. Perfect when served with fresh vegetables, chips and crackers, or as a sandwich spread.
Makes 1-1/2 Cups
1 15-ounce can white beans, drained
1/2 teaspoon salt
1 tablespoon olive oil
1/2 tablespoon lemon juice
1/2 tablespoon champagne vinegar (or rice vinegar)
1 small garlic clove
2 tablespoons fresh cilantro
Red pepper flakes (optional)
Put all ingredients except cilantro in food processor. Puree until smooth. Add cilantro and blend until cilantro is just chopped.
