Watermelon Gazpacho. A great source of Lycopene and Carotenoids.

Watermelon Gazpacho

This is a GREAT summer soup! Watermelon gazpacho will provide a rich source of carotenoids, vitamin C, vitamin A, and your B vitamins. Most people have heard that tomatoes are a great source of the antioxidant Lycopene, but you may not have known that watermelon is an even better source! And you get them both in this recipe!

Ingredients needed

1 large tomato, pureed
2 cups cubed fresh watermelon
1 teaspoon red wine vinegar
1/4 cup olive oil or try 1/8 cup olive oil and 1/8 cup flax oil, or your favorite plant/seed based omega 3 oil blend
2 tablespoons red onion
1/2 cucumber, minced
2 tablespoons fresh dill
1/2 teaspoon ground cumin
Salt and pepper
Feta cheese, for garnish optional

Preparation

In a blender or food processor, puree tomatoes and watermelon. Pour in the red wine vinegar and olive oil and pulse. Add onion, cucumber, dill and cumin and season with salt and pepper, puree until smooth. Pour into chilled bowls and sprinkle with feta and any remaining dill. Enjoy!
