This is a great vegan alternative to traditional Greek tzatziki sauce. This sauce is typically served over falafel, but is also great on veggie burgers and as a dip for vegetables.
12 ounces firm tofu
3 tablespoons fresh lemon juice
1 tablespoon white wine vinegar
1/2 teaspoon salt
3 garlic cloves, minced
2 tablespoons olive oil
1 cucumber, seeded and grated
1 tablespoon fresh mint, chopped
In a blender, blend the tofu, lemon juice, vinegar, and salt. When creamy, add the garlic and oil. Blend a few more seconds. Add salt and pepper to taste. Soak up as much water from the cucumber as possible with a paper towel, or squeeze between hands. Add cucumber and mint to the tofu mixture and stir to combine. Cover and refrigerate for at least 2-3 hours before using. Enjoy!
