This recipe was adapted from one on the Washington Trails Association website and is so good. Its not only good for hiking, but great for a midday snack and energy boost. Adding the Eat Seed Six Seed Super Blend adds even more omega 3 and fiber than the original recipe. These are also better than store bought energy bars which typically have unncessary added ingredients and sugars. Enjoy!
Ingredients are all organic whenever possible:
1 cup raw almonds, or cashews
1-1/2 cups pitted Medjool dates
1/3 cup Eat Seed Six Seed Super Blend (you can enter to win this on our blog right now)
1/3 cup unsweetened cocoa powder
1/2 tsp pure vanilla extract
1/4 tsp pure almond extract
In a food processor pulse the almonds or cashews a couple of times, then transfer to a small bowl. Add the dates and process until a paste forms. Add the nuts and remaining ingredients. Process until mixed.
Line an 8×8 glass baking dish with plastic wrap. Knock the mix out and flatten into the dish until even. Press down. Cover and refrigerate until cold. Cut into bars and store tightly wrapped.
