This vegan ice cream is so good and so easy to make! It does require an ice cream maker, but in less than 30 minutes you can have a yummy treat that is gluten and dairy free. The peanut butter can be substituted for any other nut butter if needed. You can get creative with other flavor combinations as well!
Ingredients needed for PB&J version:
1 can full fat coconut milk
3 frozen bananas
1/2 teaspoon sea salt
1/3 cup coconut sugar
1/2 cup unsalted organic peanut butter
3/4 cup grape or strawberry jam
Combine coconut milk, bananas, sea salt, sugar and peanut butter in a blender and blend until smooth. Place mixture into ice cream maker and blend for approximately 15 minutes, until thick. Stir in jam and serve immediately, or freeze for later use.
