This vegan cream of asparagus soup recipe can be found in the “Feeding the Whole Family Cookbook”. I altered is slightly, but can be made in a variety of different ways. Asparagus is the star vegetable and this soup is a fun and tasty way to prepare it! It can also be served cold. Asparagus has many anti-inflammatory and antioxidant benefits. It also contains inulin, which is beneficial for digestion.
2 teaspoons olive oil
1/2 onion, chopped
1 bunch asparagus, washed and trimmed
5 cups stock (non-vegan use homemade chicken, for vegan use vegetable)
1/2 cup cashews or rolled oats
1/2 teaspoon sea salt
Freshly squeezed lemon juice
Heat oil in a pot. Add the onion and sauté until soft. Cut asparagus into small pieces. Add to onion and sauté a few more minutes. Add stock, cashews or oatmeal, and salt. Bring to a boil. Simmer 15 minutes. Transfer to a blender and puree. Reheat if necessary. Add some fresh lemon juice to taste and serve garnished with dill.
