This is a festive dish for fall and winter. The apples add a great flavor to roasted winter squash. Winter squashes are very high in carotenoids including beta carotene, lutein and zeaxanthin. If possible, buy organic squash as they are known for pulling contaminants, such as pesticides, out of the soil in large amounts. Enjoy!
1 small buttercup squash (preferrably organic)
1/2 cup chopped, tart apples, or pears
2 teaspoons Florida Crystals
2 teaspoons coconut oil
1/2 teaspoon lemon juice
1/8 teaspoon freshly ground nutmeg
Heat oven to 400 degrees. Cut squash in half and remove fiberous insides, including seeds. (Note: the seeds can be roasted and eaten as a snack)! Place squash halves, cut side up, in ungreased baking dish. Mix remaining ingredients and spoon into squash halves. Cover and bake 30-40 minutes.
