Tomatillo Salsa. A natural source of Zeaxanthin and Lutein.

Tomatillos contain a number of different anti-oxidants including beta-carotene, zeaxanthin, lutein and Vitamin A. These 4 antioxidants are the most common ingredients found in eye support supplements, so naturally tomatillos are good for your eye health and vision. This tomatillo salsa recipe is great served as a dip, or perfect on top of tacos or enchiladas.

Ingredients needed

12 Tomatillos (med-small)
1 Large Granny Smith apple
1 Medium Spanish Onion
1 Jalapeno (seeds removed)
Handful of Cilantro
Lime Juice (from 1-2 limes)
Salt & pepper to taste

Preparation

Finely chop the first five ingredients. Blend with lime juice, salt & pepper to taste and enjoy! *Note: a food processor can be used as well, just be careful not to over process as the salsa might become too watery.
