This is a really easy recipe that is much healthier than the common fried counterpart at Chinese restaurants. Throw everything in your slow cooker and go about your day. This recipe can also be prepared with tempeh, tofu, shrimp, beef, or pork. You choose your protein source to fit you lifestyle, cravings, or budget.
1 cup chopped onion
1/4 cup Florida Crystals
1/3 cup ketchup (head to the natural section of your grocery store or to you local natural market, start using and buying ketchup without high fructose corn syrup)
1/4 cup orange juice
3 tablespoons cornstarch
3 tablespoons apple cider vinegar
2 tablespoons tamari, or soy sauce (if gluten sensitive, read the labels on these)
1 tablespoon grated peeled fresh ginger
1 pound skinless, boneless organic chicken thighs, cut into 1 inch pieces (free range, hormone and antibiotic free)
2 cups fresh pineapple chunks
1 green bell pepper, cut into 1/2 inch strips
1 yellow bell pepper, cut into 1/2 inch strips
3 cups brown rice or quinoa
Combine first 12 ingredients in a slow cooker. Cook on LOW for 6 hours. Serve over rice or quinoa.
Boost the nutrition by lightly steaming some broccoli to add to your plate.
