Recipe: Kale Cocktails! We repeat, Kale Cocktails!!

I was given the “Fifty Shades of Kale” book for Christmas, and these two recipes were immediately my favorites! – (Michelle)

Kale Pisco Sour

2 teaspoons granulated sugar
4 ounces pisco liquor
1 cup packed torn kale leaves
1/4 cup packed mint leaves
1/4 cup freshly squeezed lime juice
1 egg white
1 cup cold water
4 lime wedges

Place all ingredients except for the lime wedges in a blender. Add the cold water and blend on high speed until the kale is chopped and a thick foam forms on top. Transfer to 4 highball glasses and top each with a wedge of lime. Serve immediately.

Kalejito

2 teaspoons superfine sugar
4 ounces white rum
1/2 cup packed torn kale leaves
1/2 cup packed mint leaves, plus 2 springs for garnish
Juice of 2 limes

Combine all the ingredients in a blender and blend on high speed. Pour over 2 glasses filled with ice. Garnish with the mint sprigs and serve immediately.
