Homemade organic granola takes some time to make, but once done, makes a wholesome breakfast or mid-day snack. Serve with homemade or store bought almond milk, rice milk, or yogurt. This is also great topped with additional fresh fruit. Try it in a smoothie as a garnish on top, or blended in for texture. There are so many ways to enjoy homemade organic granola!
Organic ingredients needed:
4 cups rolled oats
3/4 cup toasted wheat germ
1/2 cup almonds, slivered
1/4 cup pecans, chopped
1/2 cup unsweetened coconut, shredded (optional)
1/2 teaspoon salt
3/4 cup frozen apple juice
5 tablespoons honey or maple syrup
2 tablespoons liquified coconut oil (optional)
1 tablespoon pure vanilla extract (or 1/2 teaspoon vanilla powder)
1/4 teaspoon pure almond extract
1/2 cup dried fruit of choice (raisins, dates, cranberries, blueberries, goji berries, etc.)
Preheat oven to 300. In a large mixing bowl, combine the first six ingredients.
In a small mixing bowl (or blender), combine the liquid ingredients. Stir with whisk, or mix, until honey is dissolved.
Drizzle the liquid ingredients onto the dry granola and mix well to coat all of the dry ingredients evenly. Spread uncooked granola onto large baking sheets with sides. The granola should not be more than 1 inch thick.
Bake for 20 minutes, stirring every five minutes. Add the dried fruit and bake an additional 5 minutes. The granola should be crisp and golden. Let cool. Store granola in a sealed container in the refrigerator or freezer.
