This homemade almond milk recipe is time consuming, but easy. It also tastes amazing and completely different than traditional store bought almond milk. Almonds are high in healthy monounsaturated fats, which can help with cholesterol levels. They also have healthy levels of the antioxidant Vitamin E, magnesium, potassium, calcium, and are a very good source of amino acids and protein.
The almonds in this recipe are soaked overnight to help with digestion. I obtained this recipe from the book listed in my profile: The Complete Book of Chinese Health and Healthing by Daniel Reid
1 cup raw almonds
1 tablespoon vanilla extract (or 1-2 vanilla beans)
Pure water and ice cubes
Soak almonds overnight in refrigerator in pure water. Drain off water, place almonds in a blender, add vanilla, honey, 4-5 cracked ice cubes and 1-1/2 cups water. Blend at high speed for 2-3 minutes.
Pour into glasses, let dregs settle to bottom, and drink. Be sure to drink the dregs, which are a great source of dietary fiber. This can also be poured over your favorite granola or museli. Enjoy!
