Recipe: Chilled Mango Chipotle Soup. High in antioxidants that protect your cells and DNA.

I love mangos and chipotles, so I was intrigued. Chilled mango chipotle soup? Turns out they taste amazing together. Mango flesh has a beautiful orange color that is extremely high in beta carotene, a highly active antioxidant that scavenges free radicals in the body, protecting cells and DNA.

Allergic to Mangos?

Mangos are also naturally sweet and are great in the hot summer months. The mango skin can sometimes be eaten and has been shown to have cholesterol lowering effects, however, it is also a common allergen. If you use a fresh mango and notice a rash or dry skin immediately after, you are probably sensitive to the peel.

Ingredients needed

2 Mangos, peeled and cubed
Juice of 1 lime
1/2 tsp Ginger powder
Salt & pepper to taste
1 tsp Chipotle powder
2 cups water

Puree all ingredients together in a blender or food processor until smooth. More spices can be added if desired. Serve cold.

Ginger love

***Ginger is one of the most versatile flavorings available; it’s the ultimate go-between for sweet and savory food, going from defining a ginger snap cookie to refreshing the palate next to sushi in an instant. Despite the common name Ginger Root, Ginger is actually a rhizome: an underground stem of the Zingiber plant first cultivated in Asia, and now grown in Africa and the Caribbean, most notably Jamaica.
