Recipe: Bean Thread Pad Thai with Shrimp or Tempeh

Bean Thread noodles are a staple in Asian cooking. They are lighter than rice noodles and a good alternative for those wanting a grain free option. The shrimp is optional in this recipe and can be replaced with tempeh or omitted entirely. Thai chili peppers can be purchased in asian food stores.

1 tablespoon garlic, minced
2 tablespoons oil
Fresh cilantro, minced
1 2oz bundle bean thread noodles
1 tablespoon fish sauce
5 tablespoons lime juice
1/2 onion, sliced into crescents
1/2 cup peanuts, toasted
1/2 teaspoon sugar
3 Thai chili peppers
1 cup celery sliced

Pour boiling water over bean thread noodles and let soak for approximately 6 minutes. Strain and add to large bowl. If you like, you can cut the noodles with scissors to make them smaller and easier to eat.

Heat oil and fry garlic in a small pan until brown. Remove garlic from pan and sauté the shrimp until pink. To make the dressing, combine the fish sauce, lime sauce, and sugar. Add all ingredients to noodles and toss to combine.
