Recipe: Baked Peaches

One of the best things about summer is the availability of peaches. Although I love peaches by themselves, this makes a nice treat if you are expecting company or just want to do something fun with the kids. I use almond cookies with no flour, only almond meal, so this recipe is gluten free.

7 peaches
10 almond cookies
1/3 cup Florida Crystals
1 egg yolk

Halve and pit 6 peaches. Place peach halves, cut side up, in a buttered (or use coconut oil) baking dish just large enough to hold them. Set aside. Grind almond cookies in a food processor and transfer crumbs to a small bowl. Peel and pit another peach and process to a smooth puree. Transfer puree to a medium bowl and mix in Florida Crystals, egg yolk and cookie crumbs. Spoon a portion of the filling into each peach half. Bake at 350 degrees until peaches are tender, about 1 hour. Serve warm with homemade whipped cream (we have a great recipe for vegan whipped cream here on the blog), and amaretto liquor if you like.
