Paleo Fruit Tarts

This is a fun dessert if you are having company over. These paleo fruit tarts are very easy to make and great for kids or adults. If you do not have individual tart pans, just make one large tart. Make sure to make this ahead as it needs to sit in the refrigerator for 4-5 hours before serving.

Ingredients needed

Makes 4 individual tarts, or 1 large (8-inch)

For the crust:
1/2 cup shredded unsweetened coconut
1 cup hazelnut flour
1/2 cup walnuts, chopped
6 tablespoons coconut oil, melted
1 tablespoon raw honey

For the filling:
1/2 cup mixed berry jam (look for jam that is naturally sweetened)
2 cups fresh mixed berries (I used raspberries, blueberries and strawberries)

Baking instructions

Preheat oven to 350. Grease the bottom and sides of 4 individual tart pans, or 1 large (8-inch) with coconut oil. In a large bowl, mix together the shredded coconut, hazelnut flour, walnuts, coconut oil, and honey. Pat the dough into the tart pans, making sure the sides are covered as well. Bake for 15 minutes, or until the crust starts to turn brown. Cool on a wire rack.

Gently mix berries with the jam until well combined. Pour mixture into the tart pans. Sprinkle with coconut or walnuts (optional). Refrigerate for 4-5 hours before serving. Enjoy!
