My daughter and I found a horned melon in our local health food store and just had to try it. I found a horned melon salsa recipe online and adapted it. You could also make this with kiwi. The horned melon is native to the Kalahari Desert of Africa where it is one of the only sources of water during the dry season. They are a mild fruit that are good by themselves as well as in this tasty salsa.
1 horned melon, seeded (or 2 kiwis, peeled and chopped)
Juice of 2 limes
2 garlic cloves, minced
1/2 cup cilantro, chopped
1/8 cup red onion, chopped
1/2 teaspoon jalapeno chile, chopped
1/2 teaspoon cumin
1/2 teaspoon sea salt
Mix all ingredients in a bowl and serve. Can be used as a marinade for meat or vegetables, or served with chips. Enjoy!
