These ground turkey recipes obviously cannot be done vegan, but I prepare them gluten free and organic. All three recipes are very popular with adults and kids! They are easy to prepare, great recipes for the holidays, and they may turn into your family’s favorite dinners all year long!
Ground Turkey Meatballs #1
4 cloves garlic, minced
5 cups spaghetti sauce (homemade or store bought)
1/2 teaspoon dried oregano
1/4 teaspoon dried thyme
Sea salt and pepper to taste
1/3 cup milk
1 small yellow onion, diced
1/4 cup gluten free Panko breadcrumbs
1/2 cup freshly grated Parmesan cheese
1/2 cup fresh parsley, chopped
1 pound organic ground turkey
In a large nonstick skillet, heat oil over medium high heat. Add garlic and sauté for approximately on minute. Stir in sauce, oregano and thyme. Season with salt and pepper if necessary. Bring to a boil, lower heat, and simmer, covered, for approximately 15 minutes.
Meanwhile make the meatballs. In a large bowl whisk together the egg, milk, 1-1/4 teaspoon sea salt and 1/4 teaspoon pepper. Stir in onion, breadcrumbs, cheese, and parsley. Add turkey and mix well until combined. Form mixture into 1 to 1-1/2 inch balls. Add meatballs to skillet with tomato sauce and spoon sauce over to coat. Place over medium heat, cover, and cook until meatballs are cooked through, around 10 minutes.
Ground Turkey Meatballs #2
These are a quick and easy weeknight meal. Make sure to serve these right away, as they will easily dry out if reheated.
1 pound organic ground turkey
1/2 cup gluten free bread crumbs
1 tablespoons seasoning mix of choice (I used AmanPrana)
1 tablespoon chopped onions
2 garlic cloves, minced
1/4 teaspoon garlic powder
1/3 cup parmesan cheese, grated
1 tablespoon tomato paste
Pinch black pepper
1/2 cup chopped parsley
Preheat oven to 400 degrees. Lightly oil a sheet pan. Combine all ingredients and mix thoroughly. Form meatballs into one inch balls and place on prepared pan. Bake approximately 15 minutes or until cooked through. (Image shown above is this recipe.)
Ground Turkey Loaf
1 small onion, chopped
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 teaspoon fresh thyme leaves, chopped
1/4 cup gluten free Worcestershire sauce
1/2 cup chicken stock
1 teaspoon tomato paste
3 pounds ground turkey
1 cup gluten free bread crumbs
2 eggs, beaten
1/2 – 3/4 cup fruit juice sweetened ketchup
Preheat oven to 325 degrees.
In medium sauté pan, heat the olive oil over medium-low heat. Add the onion, salt, pepper, and thyme until translucent, but not browned, approximately 15 minutes. Add the Worcestershire sauce, chicken stock, and tomato paste and mix well. Allow to cool to room temperature.
Combine the turkey, bread crumbs, eggs and onion mixture in a large bowl. Mix well and share into a rectangular loaf on an engrossed sheet pan. Spread the ketchup evenly on top.
Bake for approximately one and half hours. Check for doneness after 1 hour. Internal temperature should reach 160 degrees.
