This is a delicious grain free coconut pancakes recipe! Get creative and garnish with a variety of fruits and nuts for something different every time! Pancakes can be healthy, and can also be a great opportunity to for kids and adults to customize to meet nutritional needs and taste preferences.
2/3 cup almond flour
6 tablespoons coconut flour
1-1/2 tablespoons potato starch
2-1/2 teaspoons baking powder
1/2 teaspoon fine sea salt
1 cup almond or coconut milk
2/3 cup water or coconut water
1 tablespoon psyllium husk
2 tablespoons coconut sugar or Florida Crystals
2 tablespoons melted coconut oil
1 teaspoon vanilla extract
In a large bowl whisk together almond flour, coconut flour, potato starch, baking powder and salt.
In a separate bowl, whisk together milk, water and psyllium. Let stand for 10 minutes to thicken. Whisk in sugar, coconut oil and vanilla until blended.
Add the milk mixture to the flour mixture and stir until just blended.
Heat a griddle over medium heat and brush with coconut oil or spray. Pour approximately 1/4 cup batter per pancake and cook until lightly browned on both sides. Enjoy!
