This is a terrific homemade enchilada sauce and tastes so much better than store bought! The chipotle peppers give it a nice, smoky flavor. A very nutritious sauce that will become your go-to enchilada sauce from now on. This was adapted from a recipe provided by Bastyr University. Enjoy!
Makes 4 cups
2 tablespoons olive oil
5 garlic cloves, minced
2 tablespoons cumin
1 tablespoon unsweetened cocoa powder
1 28-ounce can tomato sauce
1 tablespoon canned chipotle peppers, minced
1-2 teaspoons Florida Crystals, or sugar
In a 2-quart saucepan, sauté garlic in olive oil over medium heat. Do not brown. Add the cumin and cocoa powder and cook for 1 minute. Add tomato sauce, chipotle peppers, and sugar. Bring to a boil, then reduce heat to low and simmer for 30 minutes. Sauce will stick to the bottom of the pan so stir frequently.
