Edie’s Super Chicken Salad

This is one of the many fabulous recipe creations by my mom, Edie. All of her recipes should have the word “super” in them because she is the best cook ever and all of her food is…SUPER! This recipe is easy to prepare, can be made dairy and gluten free, and can be eaten any way that you like to serve chicken salad. Let us know if you think it’s super too! Enjoy 🙂

Ingredients needed:

1 whole chicken, poached and diced (She uses all parts except the drumstick and wings, which she eats separately)
1/2 cup celery, diced
4 scallions, trimmed and thinly sliced (the picture shows red onion, the second batch we made with scallions, we preferred scallions over the red onion)
2 tablespoons fresh parsley, finely chopped
1-1/2 teaspoons fresh tarragon, finely chopped
1/2 – 1 cup olive oil mayonnaise (depending on your individual taste. Veganaise can also be used)
1 tablespoon dijon Mustard
2 teaspoons freshly squeezed lemon juice
Salt, to taste
Pepper, to taste
1 teaspoon celery salt
1/2 teaspoon garlic powder
Pinch of paprika
2 teaspoon juice from jar of jalapeños

Mixing instructions:

Add all ingredients to a large bowl and mix until combined.
