Lentils have an extremely high nutritional value and are very easy to cook. They are one of the few legumes that do not need to be soaked prior to cooking. They are very high in both soluble and insoluble fibers which help with digestive issues, heart health and blood sugar regulation, among other things. Lentils are also high in iron, which can help improve energy levels by replenishing lost iron stores.
This soup also contains curry powder, whose main ingredient is turmeric. Turmeric, among other benefits, is a potent anti-inflammatory and can help relieve pain from arthritis and other inflammatory conditions. Hope you enjoy this quick and easy recipe!
4 bacon slices (or veggie bacon), optional
1-1/2 cups onion, chopped
4 garlic cloves, chopped
3 cups chicken or vegetable broth
1 cup dried lentils
3-4 carrots, chopped
3-4 celery stalks, chopped
2 teaspoons curry powder
1/2 teaspoon ground ginger
1/4 teaspoon ground cinnamon
2 (14.5 ounce) cans stewed tomatoes, undrained
2 tablespoons dry sherry
Wash and drain lentils. Cook bacon in a large skillet until crisp. Remove bacon from pan and crumble. Set aside. Add onion and garlic to bacon drippings in pan and saute for 3-5 minutes. Transfer onion mixture to a 4 quart slow cooker. Add next seven ingredients (through the tomatoes). Cover and cook on low for 8 hours. Stir in sherry. Serve soup topped with bacon crumbles.
