Coconut Sweet Potatoes with Greens

Coconut Sweet Potatoes with Greens is ideally made with mustard greens. If those cannot be found, kale makes a good alternative. This dish is nutrient dense, high in fiber, and delicious. Enjoy!

Ingredients needed:

2 teaspoons coconut oil
1/2 onion, thinly sliced
2 garlic cloves, minced
1 teaspoon mustard seeds
1-1/2 cups coconut milk
1 teaspoon ground coriander
1/4 teaspoon cayenne pepper
1 cinnamon stick
3 cups peeled and cubed sweet potato
5 cups greens
Fresh lemon juice, to taste

Cooking instructions:

Heat oil in a saucepan over medium heat. Add onion and sauté for 5 minutes. Add garlic and mustard seeds and sauté for an additional 2 minutes.

Add coconut milk, coriander, cayenne, cinnamon stick, and sweet potato to onion mixture. Cook, covered, over medium heat for about 10 minutes, or until sweet potato begins to soften. While the sweet potato is cooking, wash the mustard greens and strip or cut leaves from the stalks. Chop the greens into bite-sized pieces

Stir the mustard greens and simmer, covered, over medium-low heat for approximately 15 minutes. The greens should be tender and the sweet potato soft. Adjust salt level if necessary and remove cinnamon stick. Just before serving, squeeze in lemon juice.
