A friend recently sent me this apple oatmeal muffins recipe to make for her for a party. The muffins do not take long to make and they are delicious. They contain no granulated sugar or flour, and the ingredients can easily be substituted to meet your individual needs.
2 tablespoons flax meal
1/3 cup water
1/3 cup plus 1/2 cup gluten free oats
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon sea salt
1/2 tablespoon cinnamon
2 tablespoons raw honey
2 ripe bananas, mashed
1 cup chopped apples
1 cup chopped walnuts
Stir flax meal and water in a bowl until combined. Set aside.
Preheat oven to 400 degrees. Line a 12-cup muffin tin or lightly grease with coconut oil.
Pulse 1/3 cup oats in a food processor until they are the consistency of flour. Combine the processed oat flour, 1/2 cup whole oats, baking powder, baking soda, salt and cinnamon in a medium bowl. In a large bowl, mix flax mixture, honey and mashed bananas. Add dry ingredients to banana mixture; stir until combined. Fold in apples and walnuts.
Fill muffin tins evenly, and garnish with additional apple slices or walnuts, if desired. Bake for 15 – 18 minutes, or until baked through. Remove from muffin tin, and cool on a wire rack.
